Midnight Fudge Cake is a rich, gooey, and indulgent chocolate dessert that’s perfect for celebrations, late-night cravings, or casual coffee dates.

Ingredients

Scale
  • 1 1/4 cups (160g) all-purpose flour
  • 1/2 cup (50g) unsweetened cocoa powder
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) brown sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs
  • 1 cup (240ml) whole milk
  • 1/2 cup (113g) melted unsalted butter
  • 1 tsp vanilla extract
  • 1/2 cup (85g) semi-sweet chocolate chips or chopped chocolate, melted

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. In a large mixing bowl, whisk together all-purpose flour, unsweetened cocoa powder, granulated sugar, brown sugar, baking powder, and salt.
  3. In a microwave-safe bowl, melt semi-sweet chocolate chips in 30-second intervals, stirring between each, until smooth. Let it cool slightly.
  4. Add eggs, whole milk, melted unsalted butter, and vanilla extract to the dry ingredients. Stir until combined.
  5. Fold the melted chocolate into the batter gently using a rubber spatula. Avoid overmixing.
  6. Transfer the batter into the prepared cake pan and smooth the top with a spatula.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  9. Dust with powdered sugar or top with whipped cream and berries before slicing and serving.
