  • 1 cup heavy cream (240 ml)
  • 1/4 cup freshly grated Parmesan cheese
  • A handful fresh basil, chopped
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Pat the salmon fillets dry with paper towels and season both sides generously with salt and pepper. Let sit at room temperature for about 10 minutes.
  2. Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Once hot, place the salmon skin-side down if it has skin. Cook for 4-5 minutes without moving it to form a crust.
  3. Carefully flip the salmon and cook the other side for 2-3 minutes until just cooked through (internal temperature around 125°F). Remove salmon from skillet and set aside.
  4. Lower heat to medium. Add minced garlic to the same skillet and sauté for about 30 seconds until fragrant. Stir in chopped sun-dried tomatoes and cook for 1 minute.
  5. Pour in heavy cream and bring to a gentle simmer. Let thicken slightly for 3-4 minutes, stirring frequently. Stir in Parmesan cheese until melted and smooth.
  6. Add lemon juice, red pepper flakes (if using), and chopped basil. Season with salt and pepper to taste.
  7. Return salmon to skillet, spoon sauce over fillets, and simmer gently for 2 minutes to finish cooking and marry flavors.
