These London Fog Shortbread Cookies are a delightful twist on the classic shortbread, infused with the dreamy flavors of a London Fog latte. Perfect for tea time or as a sweet treat to pair with your favorite cup of tea.

Ingredients

Scale
  • 1 cup (226g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 2 tablespoons finely ground Earl Grey tea leaves
  • 1 teaspoon pure vanilla extract
  • 2 cups (240g) all-purpose flour
  • Pinch of salt
  • Optional: powdered sugar for serving

Instructions

  1. In a large mixing bowl, cream 1 cup (226g) of unsalted butter and 1/2 cup (100g) of granulated sugar together until light and fluffy, about 2-3 minutes with an electric mixer.
  2. Mix in 1 teaspoon of pure vanilla extract and 2 tablespoons of finely ground Earl Grey tea leaves. Stir until evenly distributed.
  3. Gradually add 2 cups (240g) of all-purpose flour and a pinch of salt, mixing just until the dough comes together. Avoid overmixing.
  4. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  5. On a lightly floured surface, roll the dough to about 1/4-inch thickness. Use a round cookie cutter (or any shape you like) to cut out the cookies.
  6. Place the cookies on a parchment-lined baking sheet and bake at 325°F (160°C) for 12-15 minutes, or until the edges are just beginning to turn golden.
  7. Allow the cookies to cool completely on a wire rack before serving. Optional: Dust with powdered sugar for a pretty finish.

Notes

Ensure butter is softened but not melted for optimal dough consistency. Chill the dough to prevent spreading during baking. Roll dough evenly for consistent cookie thickness.
