This Loaded Cheesy Broccoli Rice Bake combines creamy rice, tender broccoli, and loads of gooey, melty cheese for a comforting and delicious dish perfect for family dinners or gatherings.

  • 2 cups cooked white rice
  • 3 cups fresh broccoli florets, steamed
  • 2 cups shredded sharp cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 cup whole milk
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons all-purpose flour
  • 1 teaspoon garlic powder
  • Salt & pepper to taste
  • Optional: 1 cup cooked, shredded chicken
  • Optional: ½ cup bacon bits
  • Optional: A few dashes of hot sauce

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with non-stick spray or butter.
  2. Steam the broccoli florets for 3-5 minutes until tender but still vibrant green. Drain and set aside.
  3. In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes to form a roux.
  4. Gradually whisk in the milk, stirring continuously to avoid lumps. Cook for 3-4 minutes until the sauce thickens.
  5. Reduce heat to low and add 1½ cups of shredded cheddar cheese, Parmesan cheese, and garlic powder. Stir until the cheese melts and the sauce is smooth. Season with salt and pepper to taste.
  6. In a large mixing bowl, combine the cooked rice, steamed broccoli, and cheese sauce. Mix until evenly coated.
  7. Transfer the mixture to the prepared baking dish and spread it out evenly.
  8. Sprinkle the remaining ½ cup of cheddar cheese on top for that irresistible cheesy crust.
  9. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
