  • 1.5 pounds boneless, skinless chicken breasts
  • 810 garlic scapes (or substitute with thinly sliced green garlic or green onions)
  • Juice of 2 medium lemons
  • 1/4 cup extra virgin olive oil (60 ml)
  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh thyme
  • 1 tbsp chopped fresh rosemary
  • 2 cloves minced garlic
  • 1 tsp salt
  • 1/2 tsp freshly ground black pepper
  • Optional: 1 tsp honey or maple syrup

Instructions

  1. Prepare the marinade by whisking together olive oil, lemon juice, minced garlic, chopped parsley, thyme, rosemary, salt, black pepper, and optional honey in a mixing bowl.
  2. Place chicken breasts and garlic scapes in a large resealable plastic bag or shallow dish. Pour marinade over and coat evenly. Seal or cover and refrigerate for at least 30 minutes, up to 2 hours.
  3. Preheat grill to medium-high heat (about 400°F / 204°C). Clean and oil the grates to prevent sticking.
  4. Grill chicken breasts for 12-15 minutes, about 6-7 minutes per side, flipping once. Use tongs to avoid piercing the meat. Cook until internal temperature reaches 165°F (74°C).
  5. Grill garlic scapes for 4-6 minutes, turning occasionally, until tender and slightly charred.
  6. Remove chicken from grill and let rest for 5 minutes, loosely tented with foil.
  7. Serve grilled chicken breasts with garlic scapes, garnished with fresh herb sprigs or lemon wedges if desired.

Notes

If chicken starts to char too fast, move to a cooler part of the grill. Flip chicken only once to keep crust intact and juices locked in. Let chicken rest 5 minutes after grilling for juicier bites. Garlic scapes cook quickly; watch closely to avoid burning. If no garlic scapes, substitute with green onions or ramps. For indoor cooking, use grill pan or bake chicken at 400°F for 20-25 minutes.
