A quick and easy recipe to make juicy, flavorful White Castle-style sliders at home with simple ingredients and a steaming technique that locks in moisture.

  • 1 lb (450 g) ground beef (80/20 blend)
  • 1 large yellow onion, finely chopped or grated
  • 1 tsp salt (or to taste)
  • ½ tsp freshly ground black pepper
  • ¼ cup (60 ml) water
  • 8 small slider buns (potato rolls recommended)
  • 4 slices American cheese, cut in half (optional)
  • Pickles and mustard (optional, for topping)

Instructions

  1. Peel and finely chop or grate one large yellow onion. Set aside.
  2. In a medium bowl, combine ground beef with salt and black pepper. Mix gently with your hands without overworking the meat.
  3. Divide the beef into 8 equal portions (about 2 oz or 57 g each). Press each portion into a thin, square patty roughly 3 inches wide. Press a small indentation in the center of each patty to prevent puffing during cooking.
  4. Heat a large skillet or griddle over medium-high heat for 3-4 minutes until hot but not smoking. No oil needed.
  5. Arrange patties in the skillet without overcrowding. Sprinkle chopped onions evenly over the patties. Pour ¼ cup water around the edges of the skillet (not directly on patties) and immediately cover with a lid. Cook covered for 5-6 minutes to steam.
  6. Remove lid carefully. Flip each patty gently, top each with half a slice of American cheese if using. Cook uncovered for another 2-3 minutes until cheese melts and patties are cooked through.
  7. Slice and lightly toast slider buns in a separate pan or toaster oven until just golden.
  8. Assemble sliders by placing each patty on a bun bottom, adding pickles or mustard if desired, then topping with the bun lid. Serve immediately while warm and juicy.

Notes

Do not overwork the meat to keep patties tender. Press a shallow indentation in the center of patties to prevent puffing. Steaming with water and covering the pan is key to juicy sliders. Use fresh onions for best flavor. Toast buns lightly to avoid sogginess.
