Ingredients

Scale
  • 2 cups (240g) all-purpose flour
  • 2 teaspoons (8g) baking powder
  • 2 tablespoons (25g) granulated sugar
  • ½ teaspoon (3g) salt
  • 1 ¾ cups (420ml) milk, room temperature
  • 2 large eggs, room temperature
  • ⅓ cup (75g) unsalted butter, melted and cooled
  • 1 teaspoon (5ml) vanilla extract
  • 1 cup (175g) white chocolate chips
  • 2 tablespoons (30ml) heavy cream
  • A few drops natural beet juice or pink food coloring

Instructions

  1. Preheat your waffle iron to medium-high heat (about 5 minutes).
  2. In a large bowl, whisk together flour, baking powder, sugar, and salt.
  3. In a separate bowl, beat eggs, then add milk, melted butter, and vanilla extract; whisk until smooth.
  4. Slowly pour wet ingredients into dry ingredients, stirring gently just until combined; lumps are okay.
  5. Lightly grease waffle iron if needed. Pour ½ to ¾ cup batter into center, spread gently, close lid and cook 4-5 minutes until golden brown and crisp.
  6. While waffles cook, melt white chocolate chips with heavy cream in microwave-safe bowl in 20-second bursts, stirring until smooth.
  7. Stir in beet juice or food coloring until desired pink shade is achieved.
  8. Drizzle warm pink chocolate over cooked waffles using a spoon or small spatula and serve immediately.

Notes

Do not overmix batter to keep waffles tender. Preheat waffle iron thoroughly to avoid sticking. Melt white chocolate slowly to prevent burning. Serve waffles immediately for best texture. Store leftovers in airtight container in fridge up to 2 days or freeze for longer storage.
