  • 1 cup whole milk
  • 1 can (10 oz) diced tomatoes with green chilies (like Rotel)
  • 2 tbsp cream cheese, softened
  • 1/2 lb ground beef
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped green onions
  • 1/4 cup sliced black olives
  • Optional: fresh cilantro for garnish

Instructions

  1. Prepare the Queso Layer: In a medium saucepan over low heat, combine Velveeta cubes, whole milk, cream cheese, and diced tomatoes with green chilies. Stir constantly to prevent burning until smooth and creamy, about 10-15 minutes. Keep warm on low heat.
  2. Cook the Beef: Heat a skillet over medium-high heat. Add ground beef and cook, breaking it up, until browned and cooked through, about 6-8 minutes. Drain excess fat if needed. Add chili powder, cumin, garlic powder, salt, and pepper. Stir and cook for another 2 minutes.
  3. Assemble the Dip: Preheat oven to 350°F (175°C). Spread warm queso in a baking dish as the first layer. Spoon seasoned ground beef evenly over the queso. Sprinkle shredded cheddar cheese on top.
  4. Bake: Place the assembled dip in the oven and bake for 10-12 minutes until cheese is melted and bubbly.
  5. Add Fresh Toppings and Serve: Remove from oven and immediately sprinkle diced tomatoes, green onions, black olives, and optional cilantro over the top. Serve hot with tortilla chips, sliced veggies, or warm pita bread.

Notes

Use low heat and stir frequently when melting cheese to avoid graininess. Brown beef well and season properly for best flavor. Warm the serving dish before layering to keep dip hot longer.
