These bite-sized cheeseburger puff pastry bites combine juicy ground beef, melted cheddar, and flaky puff pastry for an easy, crowd-pleasing game day snack ready in under 30 minutes.

  • 1 pound (450 g) 80/20 ground beef
  • 2 sheets frozen puff pastry, thawed (preferably all-butter)
  • 1 cup (100 g) shredded sharp cheddar cheese
  • 1 small yellow onion, finely diced
  • 1 teaspoon garlic powder
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • 2 tablespoons Dijon mustard
  • 1 beaten egg (for egg wash)
  • Finely chopped pickles (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Heat a skillet over medium-high heat. Add ground beef, breaking it apart with a spatula. Cook until browned and no longer pink, about 6-8 minutes. Drain excess fat if needed.
  3. Stir in diced onion, garlic powder, Worcestershire sauce, Dijon mustard, salt, and pepper. Cook for another 2-3 minutes until onion softens and mixture is fragrant. Remove from heat and let cool slightly.
  4. On a lightly floured surface, unfold one sheet of thawed puff pastry. Slice into 16 equal squares (about 3×3 inches each). Repeat with second sheet.
  5. Spoon a heaping teaspoon of beef mixture onto the center of each pastry square. Top with about 1 teaspoon shredded cheddar cheese. Add finely chopped pickles if desired.
  6. Fold each square into a triangle by bringing one corner over the filling to the opposite corner. Press edges firmly with a fork to seal.
  7. Beat the egg in a small bowl. Use a pastry brush to coat tops and edges of each puff pastry bite with egg wash.
  8. Place baking sheet in oven and bake for 15-18 minutes, or until puffed and golden brown.
  9. Remove from oven and let cool on pan for 5 minutes before serving.

Notes

Do not overload pastry squares with filling to avoid leaks. Chill assembled bites for 10 minutes before baking if kitchen is warm. Use egg wash for a golden finish. Can be air-fried at 375°F (190°C) for 12 minutes as an alternative cooking method. Store leftovers in airtight container in refrigerator up to 3 days; reheat in oven at 350°F (175°C) for 8-10 minutes.
