  • 1 cup (240 ml) heavy whipping cream, cold
  • 1/4 cup (30 g) powdered sugar
  • 1 tsp fresh mint extract
  • A few drops green food coloring (optional)
  • 1/3 cup (60 g) mini chocolate chips, semi-sweet or dark
  • 2 oz (60 g) cream cheese, softened
  • 1/2 tsp vanilla extract

Instructions

  1. Chill your mixing bowl and beaters in the fridge for about 15 minutes before starting.
  2. Pour 1 cup (240 ml) of heavy whipping cream into the chilled bowl. Beat on medium-high speed until soft peaks form (about 3-4 minutes).
  3. Gradually add 1/4 cup (30 g) powdered sugar, continuing to beat until stiff peaks form.
  4. In a separate bowl, beat 2 oz (60 g) softened cream cheese until smooth.
  5. Add 1 tsp fresh mint extract, 1/2 tsp vanilla extract, and a few drops of green food coloring to the cream cheese. Mix well until fully combined and smooth.
  6. Gently fold the mint-flavored cream cheese mixture into the whipped cream using a spatula, being careful not to deflate the mousse.
  7. Carefully fold in 1/3 cup (60 g) mini chocolate chips until evenly distributed.
  8. Spoon the mousse into serving cups or ramekins, filling about 3/4 full.
  9. Refrigerate the mousse cups for at least 2 hours or until set.
  10. Optional: Garnish with fresh mint sprigs or extra mini chocolate chips before serving.

Notes

Chill bowls and beaters before whipping cream for best results. Use mini chocolate chips to prevent sinking; if unavailable, chop regular chips finely and toss with a teaspoon of flour. Fold ingredients gently to keep mousse light and airy. Refrigerate at least 2 hours or overnight for best flavor and texture. Dairy-free version can be made with coconut cream and dairy-free cream cheese.
