Irresistible St. Patrick’s Irish Potato Nachos

A festive and easy-to-make snack featuring crispy thinly sliced potatoes topped with melted cheddar cheese, green onions, bacon bits, jalapeños, and sour cream. Perfect for St. Patrick’s Day or any cozy gathering.

  • 3 large Russet or Yukon Gold potatoes, thinly sliced
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste
  • 1 ½ cups shredded sharp cheddar cheese
  • 3 stalks green onions, thinly sliced
  • ½ cup cooked and crumbled bacon bits (optional)
  • ½ cup sour cream
  • 2 small jalapeños, thinly sliced
  • A handful fresh parsley or cilantro, chopped
  • Optional extras: diced tomatoes, avocado slices, hot sauce

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and dry the potatoes thoroughly. Using a mandoline or sharp knife, slice them into 1/8-inch (3 mm) thin rounds, keeping slices uniform.
  3. Place the potato slices in a large mixing bowl. Drizzle with olive oil, sprinkle with salt and black pepper, then toss gently to coat all slices evenly.
  4. Arrange the potato slices in a single layer on a baking sheet, avoiding overlap. Use two trays if necessary.
  5. Bake for 20-25 minutes, flipping the slices carefully halfway through baking to ensure both sides become golden and crispy.
  6. Remove the baking sheet from the oven once potatoes are crisp and golden. Immediately sprinkle shredded cheddar cheese evenly over the hot potatoes.
  7. Return the tray to the oven for 5-7 minutes to melt the cheese until bubbly.
  8. Remove again and top with cooked bacon bits, sliced jalapeños, and chopped green onions. Add dollops of sour cream and scatter fresh parsley or cilantro on top.
  9. Serve hot immediately for best texture and flavor.

Use a mandoline slicer for uniform thin potato slices to ensure crispiness. Flip potato slices halfway through baking to avoid sogginess. Add delicate toppings like sour cream and fresh herbs just before serving to keep flavors fresh. For dairy-free or vegetarian versions, substitute cheese and sour cream with alternatives and omit bacon or replace with smoked tempeh or mushrooms. Reheat leftovers in the oven at 350°F for 10 minutes to restore crispiness; avoid microwaving.
