  • 1/4 cup (50g) granulated sugar
  • 1 cup (120g) all-purpose flour
  • 1/2 cup (50g) unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup (115g) unsalted butter, melted

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups (120g) mini marshmallows
  • 1 cup (170g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Stir until the mixture resembles wet sand. Press evenly into the bottom of the pan to form the crust. Bake for 8 minutes, then set aside to cool.
  3. In a medium bowl, whisk together the flour, cocoa powder, salt, and baking powder. In another bowl, mix melted butter and sugar until smooth. Stir in the eggs and vanilla extract until fully combined. Gradually add the dry ingredients to the wet, stirring until just combined.
  4. Pour the brownie batter over the cooled graham cracker crust, spreading it evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  5. Remove the pan from the oven and sprinkle the mini marshmallows evenly over the brownie layer. Scatter the chocolate chips on top. Return the pan to the oven for 3-5 minutes, or until the marshmallows puff up slightly and begin to turn golden.
  6. Let the s’mores brownie bars cool completely in the pan. Refrigerate them for about 30 minutes to make slicing easier. Once set, use the parchment paper to lift the bars out, then slice them into squares or rectangles.
