Ingredients

  • Skinless salmon fillets, fresh or frozen (thawed)
  • Store-bought or homemade basil pesto
  • Penne, fettuccine, or spaghetti
  • Heavy cream
  • Minced garlic cloves
  • High-quality extra virgin olive oil
  • Freshly grated Parmesan cheese
  • Fresh lemon juice
  • Salt
  • Pepper

Instructions

  1. Bring a large pot of salted water to a boil. Add your pasta and cook according to package instructions until al dente. Drain and set aside.
  2. Season the salmon fillets with salt and pepper. Heat olive oil in a skillet over medium heat. Sear the salmon for 3-4 minutes per side until cooked through and golden brown. Remove from the skillet and set aside.
  3. In the same skillet, reduce the heat to low and add minced garlic. Sauté for 1 minute. Stir in the heavy cream and pesto until well combined. Simmer for 2-3 minutes while stirring occasionally.
  4. Toss the cooked pasta into the skillet with the sauce. Mix thoroughly to coat the pasta evenly.
  5. Break the cooked salmon into bite-sized chunks. Gently fold into the pasta and sauce mixture.
  6. Drizzle with fresh lemon juice and top with grated Parmesan cheese. Serve immediately while warm.

Notes

Reserve pasta water to adjust sauce consistency. Use fresh ingredients for the best flavor. Avoid overcooking the salmon to keep it moist.
