  • 2 medium carrots, peeled and chopped
  • 1 large onion, chopped

  • 4 cups vegetable broth
  • Pinch of cinnamon
  • Dash of nutmeg
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Place the cubed butternut squash and chopped carrots on the baking sheet. Drizzle with 2 tablespoons of olive oil and sprinkle with salt and pepper. Toss to coat evenly.
