Irresistible Raspberry Lemon Posset

A creamy, no-bake dessert combining the bright zing of lemon with sweet-tart raspberries, perfect for a light and elegant treat.

  • 2 cups (480 ml) heavy cream (at least 36% fat)
  • 2/3 cup (135 g) granulated sugar (can substitute coconut sugar)
  • Zest and juice of 2 large fresh lemons (about 1/3 cup or 80 ml juice)
  • 1 cup (125 g) fresh raspberries
  • 1 teaspoon vanilla extract (optional)
  • Mint leaves for garnish

Instructions

  1. Zest 2 large lemons carefully, avoiding the white pith. Juice the lemons to get about 1/3 cup (80 ml) of fresh lemon juice and set aside.
  2. In a medium saucepan, combine 2 cups (480 ml) heavy cream with 2/3 cup (135 g) granulated sugar. Warm over medium heat, stirring regularly until sugar dissolves (about 5 minutes). Avoid boiling.
  3. Allow the cream mixture to come to a gentle simmer with small bubbles around the edge, then reduce heat and simmer for exactly 3 minutes to thicken without curdling.
  4. Remove saucepan from heat. Stir in lemon zest, lemon juice, and 1 teaspoon vanilla extract if using. The mixture will thicken slightly as the acid reacts with the cream.
  5. Pour the mixture through a fine mesh sieve into a clean mixing bowl to remove zest bits and ensure smooth texture, using a spatula to push it through gently.
  6. Divide the strained posset evenly into 4 to 6 serving glasses or ramekins. Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight, until set.
  7. Just before serving, lightly mash 1 cup (125 g) fresh raspberries with a fork to release juices but keep some texture.
  8. Spoon the mashed raspberries over the set posset and garnish with mint leaves.

Notes

Use medium-low heat to avoid scorching the cream. Do not boil the cream mixture. Strain the mixture for smooth texture. Chill overnight for best results. For dairy-free, substitute heavy cream with full-fat coconut milk. Adjust sugar to taste for a lower-sugar version. Adding limoncello after heating creates an adult-only variation.
