A decadent, custardy bake packed with warm pumpkin spice flavors, perfect for cozy fall mornings and sharing with family or friends.

Ingredients

Scale
  • Day-old bread (Brioche, challah, or French bread)
  • 1 cup pumpkin puree
  • 6 large eggs
  • 2 cups milk or half-and-half
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1 teaspoon vanilla extract
  • Butter (for greasing the pan and optional topping)
  • Optional toppings: Maple syrup, whipped cream, chopped nuts, or powdered sugar

Instructions

  1. Slice the bread into thick pieces, about 1-inch wide. If using fresh bread, let it sit out for a few hours to dry out slightly.
  2. Grease the baking dish thoroughly with butter or non-stick cooking spray.
  3. In a large bowl, whisk together eggs, milk, pumpkin puree, brown sugar, granulated sugar, cinnamon, nutmeg, cloves, and vanilla extract to make the custard.
  4. Arrange the bread slices in the baking dish, slightly overlapping them.
  5. Slowly pour the custard mixture over the bread, ensuring every piece is well-soaked. Use a spatula to gently press down the bread if needed.
  6. Cover the dish with plastic wrap and refrigerate for at least 2 hours or overnight.
  7. Preheat the oven to 350°F (175°C) and let the dish sit at room temperature for about 15 minutes before baking.
  8. Remove the plastic wrap and bake for 40-45 minutes, or until the top is golden and slightly crispy. Check with a toothpick—it should come out clean.
  9. Let the bake cool for 5 minutes before serving. Top with maple syrup, whipped cream, or your favorite garnish.

Notes

[‘Use stale bread for better texture.’, ‘Let the bread soak in the custard overnight for maximum flavor.’, ‘Taste the custard before pouring to ensure the spice level is balanced.’, ‘Cover the dish with foil halfway through baking if the top starts to brown too quickly.’]
