  • 1 cup shredded mozzarella cheese (low-moisture)
  • 1/2 cup parmesan cheese
  • 1/4 cup pepperoni slices, cut into small pieces
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Nonstick cooking spray

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a mixing bowl, combine the shredded mozzarella and parmesan cheese with the Italian seasoning and garlic powder.
  3. Drop small, evenly spaced piles of the cheese mixture onto the prepared baking sheet. Flatten each pile slightly with the back of a spoon.
  4. Top each cheese pile with a few pieces of pepperoni. Sprinkle crushed red pepper flakes on top, if desired.
  5. Bake for 8–12 minutes, or until the edges of the cheese are golden and crispy.
  6. Remove from the oven and let the chips cool on the baking sheet for a few minutes. They’ll firm up as they cool.
  7. Carefully transfer the chips to a serving plate or airtight container for storage.

Notes

Keep a close eye on the chips while baking as cheese can burn quickly. Experiment with toppings like diced olives, mushrooms, or pineapple for a fun twist.
