  • 1 cup granulated sugar
  • 2 teaspoons baking powder

  • 2 large eggs
  • 1 cup milk (can substitute almond or oat milk)
  • 1/2 cup vegetable oil (can substitute melted butter)
  • 1/2 cup chopped pistachios, toasted (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your loaf pan with butter or nonstick spray, then lightly dust with flour.
  2. In a large mixing bowl, whisk together the flour, sugar, pistachio pudding mix, baking powder, and salt until well combined.
  3. In a separate bowl, whisk the eggs, milk, and vegetable oil until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Be careful not to overmix—the batter should be slightly lumpy.
  5. Pour the batter into the prepared loaf pan. Smooth the top with a spatula and sprinkle chopped pistachios evenly over the surface.
