  • 4 black tea bags (Assam or Darjeeling recommended)
  • 4 cups (1 liter) water

  • Ice cubes as needed
  • Optional: A handful of fresh mint leaves for garnish

Instructions

  1. Bring 4 cups (1 liter) of water to a rolling boil in a kettle or saucepan (about 5 minutes).
  2. Place 4 black tea bags into a large heatproof pitcher and pour the boiling water over them. Steep for 5-7 minutes depending on desired strength. Remove tea bags, squeezing gently.
  3. While the tea is still warm, stir in ¼ to ½ cup granulated sugar until fully dissolved (about 2 minutes).
  4. Peel and slice 3 large peaches. Puree the slices in a blender until smooth or pulse for some texture.
  5. Pour the peach puree into the sweetened tea and stir thoroughly. Optionally strain through a fine mesh sieve for a smoother drink.
  6. Stir in 2 tablespoons fresh lemon juice.
  7. Refrigerate the pitcher for at least 1 hour to chill and meld flavors, or add ice cubes directly if in a hurry.
  8. Serve over ice cubes, garnished with fresh mint leaves or a thin peach slice if desired.

Use ripe, juicy peaches for best flavor. Adjust sugar to taste. Steep tea 5-7 minutes to avoid bitterness. Puree peaches for smooth texture or pulse for some chunks.
