  • ½ cup unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish or line it with parchment paper.
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture firmly into the bottom of the prepared dish to create an even layer. Bake for 10 minutes and set aside to cool.
  3. Use an electric mixer to beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract. Pour the filling over the cooled crust.
  4. In a separate bowl, toss peach slices with brown sugar, flour, cinnamon, and nutmeg. Arrange the peaches evenly over the cheesecake layer.
  5. Mix flour, oats, brown sugar, cinnamon, and salt in a bowl. Stir in melted butter until crumbly. Sprinkle the topping evenly over the peaches.
  6. Place the dish in the oven and bake for 40-45 minutes, or until the top is golden and the cheesecake layer is set. Cool completely before slicing into bars.
