  • 1 lb Italian beef sausage (mild or spicy)
  • 1 cup freshly grated Parmesan cheese
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 2 medium potatoes, cubed (Yukon Gold recommended)
  • 4 cups chicken or beef broth (low sodium)
  • 1 cup crushed tomatoes
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Dice the onion, mince the garlic, chop the carrots, celery, and potatoes, and grate the Parmesan cheese. Set everything aside.
  2. Heat olive oil in a large soup pot over medium heat. Add the Italian beef sausage and cook until browned, breaking it up with a spoon. Remove the sausage and set aside.
  3. In the same pot, add the diced onions and minced garlic. Cook until the onions are translucent and fragrant, about 3 minutes.
  4. Add the carrots, celery, and potatoes. Stir well and cook for 5 minutes to soften them slightly.
  5. Pour in the chicken or beef broth and add the crushed tomatoes. Stir in the Italian seasoning, salt, and pepper.
  6. Return the sausage to the pot and bring the soup to a boil. Reduce the heat to low and let it simmer for 25-30 minutes, or until the potatoes are tender.
  7. Stir in the freshly grated Parmesan cheese until it’s melted and well incorporated. Adjust seasoning if needed.
  8. Ladle the soup into bowls and garnish with extra Parmesan and a sprinkle of Italian herbs if desired. Serve warm.
