Ingredients

Scale
  • 1 pound ground beef (80/20 for the perfect balance of flavor and moisture)
  • 1/2 cup breadcrumbs (plain or seasoned)
  • 1/4 cup milk (whole or 2%)
  • 1 large egg
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1/4 cup ketchup (plus extra for the glaze)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 pounds potatoes (russet or Yukon Gold, peeled and cubed)
  • 1/2 cup heavy cream
  • 3 tablespoons butter
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese
  • 1/4 cup Parmesan cheese
  • 2 tablespoons chopped parsley (optional, for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, ketchup, salt, and pepper. Mix gently until just combined.
  3. Transfer the meat mixture to a greased loaf pan and press it gently into shape. Spread a thin layer of ketchup on top for the glaze.
  4. Bake the meatloaf in the oven for 50-60 minutes, or until the internal temperature reaches 160°F (72°C).
  5. While the meatloaf bakes, boil the peeled and cubed potatoes in salted water for 15-20 minutes, or until fork-tender.
  6. Drain the potatoes and return them to the pot. Add heavy cream, butter, garlic powder, salt, and pepper, and mash until smooth and creamy.
  7. Spread the mashed potatoes over the meatloaf in an even layer. Sprinkle cheddar cheese and Parmesan on top, then return to the oven for 5-10 minutes, or until the cheese is melted and bubbly.
  8. Remove the meatloaf from the oven, let it rest for 5 minutes, and sprinkle with parsley if desired. Slice and serve warm.

Notes

For a crispy cheese topping, broil the dish for 1-2 minutes before serving. Use a meat thermometer to ensure the meatloaf reaches an internal temperature of 160°F (72°C).
