  • 4 boneless, skinless chicken breasts (about 6 oz or 170 g each)
  • 2 tablespoons olive oil (extra virgin preferred)
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped (packed in oil preferred)
  • 1 cup heavy cream (240 ml)
  • 1/2 cup chicken broth (120 ml), homemade or low-sodium store-bought
  • 1/3 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning (blend of oregano, basil, thyme)
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • A handful fresh basil or parsley, chopped (for garnish)

Instructions

  1. Pat chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and Italian seasoning. Let rest for about 5 minutes.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F / 74°C). Remove chicken and keep warm tented with foil.
  3. Reduce heat to medium. Add butter to the skillet and melt. Add minced garlic and sauté for about 30 seconds until fragrant, avoiding browning.
  4. Stir in chopped sun-dried tomatoes and cook for 1 minute to release flavor.
  5. Pour in chicken broth to deglaze the pan, scraping browned bits with a wooden spoon. Simmer for 2 minutes to reduce slightly.
  6. Lower heat to medium-low. Stir in heavy cream and Parmesan cheese. Stir constantly until cheese melts and sauce thickens slightly (3-4 minutes). Season with red pepper flakes (optional), salt, and pepper to taste.
  7. Return chicken breasts to the skillet, nestling them into the sauce. Spoon sauce over chicken and simmer gently for 2-3 minutes to meld flavors and reheat chicken.
  8. Garnish with chopped fresh basil or parsley. Serve immediately.

Notes

If sauce thickens too much, add a splash of chicken broth or cream to loosen. Rest chicken before cooking sauce to keep it juicy. Cook chicken in batches if pan is crowded to ensure proper searing. For dairy-free, substitute heavy cream with coconut cream and Parmesan with nutritional yeast.
