  • 4 boneless, skinless chicken breasts (about 6 oz / 170 g each)
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped (packed in oil)
  • 1 cup chicken broth (240 ml)
  • ¾ cup heavy cream (180 ml)
  • ½ cup freshly grated parmesan cheese (50 g)
  • 1 teaspoon Italian seasoning (or mix of dried basil, oregano, and thyme)
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh basil, a handful chopped (optional)

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and 1 teaspoon Italian seasoning.
  2. Heat 2 tablespoons olive oil and 2 tablespoons unsalted butter in a large skillet over medium-high heat until butter is melted and foamy and oil is shimmering, about 2 minutes.
  3. Add chicken breasts and cook for 5-6 minutes on each side without moving them until golden-brown crust forms. Chicken will not be fully cooked yet.
  4. Transfer chicken to a plate and tent loosely with foil to keep warm.
  5. Lower heat to medium and add minced garlic and chopped sun-dried tomatoes to the skillet. Cook for 1-2 minutes until fragrant, stirring constantly.
  6. Pour in 1 cup chicken broth followed by ¾ cup heavy cream. Stir to combine, scraping up browned bits from the pan.
  7. Bring sauce to a gentle simmer and cook for about 5 minutes until it thickens slightly. Stir in ½ cup freshly grated parmesan cheese and ¼ teaspoon red pepper flakes if using. Season with salt and pepper to taste.
  8. Return chicken breasts to the pan, nestling them into the sauce. Spoon sauce over each breast. Cover skillet and simmer gently for 5-7 minutes until chicken is cooked through (internal temperature 165°F / 74°C).
  9. Remove from heat and sprinkle chopped fresh basil over the top.
  10. Serve immediately with sauce spooned over the chicken.

Notes

Pat chicken dry before seasoning to ensure a golden crust. Use fresh parmesan cheese for best flavor. Adjust sauce thickness by adding more broth or cream if too thick, or simmer longer if too thin. Can substitute chicken thighs with longer cooking time. For dairy-free, use coconut milk and nutritional yeast.
