Instructions

  1. In a small saucepan, simmer 1 cup of apple cider over medium heat until reduced to about 1/4 cup. Let it cool completely.
  2. In a large mixing bowl, cream together 1/2 cup softened butter, 1/2 cup granulated sugar, and 1/4 cup brown sugar until light and fluffy (about 2 minutes).
  3. Beat in 1 egg, 1 teaspoon vanilla extract, and the cooled apple cider concentrate. Mix until well combined.
  4. In a separate bowl, whisk together 1 3/4 cups all-purpose flour, 1/2 teaspoon cream of tartar, 1/2 teaspoon baking soda, 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, and 1/4 teaspoon salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until a dough forms. Be careful not to overmix.
  6. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  7. Mix 1/4 cup granulated sugar with 1 teaspoon ground cinnamon in a small bowl.
  8. Roll the chilled dough into 1-inch balls, then roll each ball in the cinnamon sugar mixture to coat.
  9. Place the dough balls 2 inches apart on a parchment-lined baking sheet. Bake at 350°F (175°C) for 9-11 minutes or until the edges are set.
  10. Allow the cookies to cool on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely.
  11. Whisk together 1/2 cup powdered sugar, 2 tablespoons maple syrup, and 1-2 teaspoons milk until smooth. Adjust the consistency as needed.
  12. Drizzle the maple glaze over the cooled cookies and let it set for 10 minutes before serving.
