  • 1 tablespoon lemon zest (about 2 lemons)
  • ½ cup (120ml) fresh lemon juice
  • 1 cup (240ml) buttermilk
  • 16 oz (450g) cream cheese, softened
  • ½ cup (100g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup (230g) unsalted butter, softened
  • 4 cups (500g) powdered sugar
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons heavy cream (adjust for desired consistency)

Instructions

  1. Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan and line the bottom with parchment paper. In a medium bowl, beat the cream cheese and sugar until smooth. Add the eggs and vanilla, mixing until just combined. Pour the batter into the prepared pan and bake for 40-45 minutes, or until the center is set. Cool completely and refrigerate for at least 2 hours.
  2. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. In a large bowl, whisk together the flour, baking powder, baking soda, and salt. In another bowl, beat the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the lemon zest and juice.
