This lasagna soup combines all the flavors of classic lasagna—hearty tomato sauce, tender pasta, and gooey cheese—into a warm, comforting bowl of soup perfect for cozy fall nights.

Ingredients

Scale
  • 1 pound ground Italian sausage (mild or spicy)
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth (or vegetable broth)
  • 28 ounces crushed tomatoes
  • 2 tablespoons tomato paste
  • 8 ounces broken lasagna noodles (or any short pasta like rotini or penne)
  • 1 tablespoon Italian seasoning
  • Salt and pepper, to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil, chopped (optional)

Instructions

  1. Heat a large pot or Dutch oven over medium heat. Add the ground Italian sausage and cook, breaking it up with a wooden spoon, until browned—about 6–8 minutes. Drain any excess grease, if needed.
  2. Add the diced onion and cook until softened, about 3–4 minutes. Stir in the minced garlic and cook for another minute, until fragrant.
  3. Stir in the tomato paste and cook for 2 minutes to deepen the flavor.
  4. Pour in the chicken broth and add the crushed tomatoes. Stir to combine and bring the mixture to a gentle boil.
  5. Add the broken lasagna noodles (or your chosen pasta) to the pot. Reduce the heat to medium-low and let simmer for about 10–12 minutes, or until the pasta is tender.
  6. Season the soup with Italian seasoning, salt, and pepper to taste.
  7. Once the pasta is cooked, ladle the soup into bowls. Top each serving with a dollop of ricotta cheese, a sprinkle of shredded mozzarella, and a generous amount of grated Parmesan.
  8. Garnish with fresh basil for a pop of color and additional flavor. Serve hot and enjoy!

Notes

[‘Don’t overcook the pasta to avoid it becoming mushy.’, ‘Take your time to brown the sausage properly for added flavor.’, ‘Taste and adjust the seasoning before serving.’, ‘Layer the cheese as toppings instead of mixing them directly into the soup.’, ‘Lasagna soup tastes even better the next day as the flavors meld together.’]
