A creative and delicious way to celebrate St. Patrick’s Day, combining traditional Irish flavors with a fun taco twist. Perfect for using up leftover corned beef and mashed potatoes.

Ingredients

  • Corned Beef (sliced or shredded)
  • Mashed Potatoes (creamy and buttery)
  • Green Cabbage (shredded thinly)
  • Carrots (grated)
  • Apple Cider Vinegar
  • Dijon Mustard
  • Honey
  • Flour Tortillas
  • Fresh Parsley (optional)
  • Salt
  • Pepper

Instructions

  1. Prepare the Slaw: Combine shredded cabbage and grated carrots in a large mixing bowl. Whisk together apple cider vinegar, Dijon mustard, honey, salt, and pepper in a smaller bowl. Pour the dressing over the cabbage mixture and toss until fully coated. Set aside.
  2. Reheat the Corned Beef: Warm corned beef slices or shreds in a skillet over medium heat for about 5 minutes, adding a splash of water to prevent drying out.
  3. Warm the Tortillas: Heat flour tortillas in a dry skillet for about 30 seconds per side until soft and pliable. Keep warm under a clean kitchen towel.
  4. Assemble the Tacos: Place a tortilla as the base. Add a generous spoonful of mashed potatoes, followed by warm corned beef. Top with cabbage slaw and sprinkle with fresh parsley, if desired.
  5. Serve & Enjoy: Fold the tacos and serve immediately.
