Irresistible Homemade Lemon Garlic Shrimp Pasta

A quick and easy lemon garlic shrimp pasta that balances bright citrus notes with savory garlic and tender shrimp, perfect for a satisfying and fresh dinner.

  • 1 pound large shrimp, peeled and deveined
  • 8 ounces linguine or spaghetti
  • 2 tablespoons extra virgin olive oil
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 large lemon, zested and juiced
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste
  • 1/2 cup grated Parmesan cheese (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add linguine or spaghetti and cook according to package instructions until al dente (about 9-11 minutes). Reserve 1/2 cup pasta water, then drain pasta and set aside.
  2. Pat shrimp dry with paper towels and season lightly with salt and pepper.
  3. In a large skillet, heat olive oil and butter over medium heat. Once butter melts and foams, add minced garlic and sauté for about 30 seconds until fragrant but not browned.
  4. Add shrimp in a single layer and cook for 2-3 minutes on one side until pink and opaque. Flip and cook for another 1-2 minutes. Remove shrimp from skillet and set aside.
  5. Lower heat to medium-low. Add lemon zest and juice to the skillet, stirring to combine with garlic butter. Sprinkle in red pepper flakes if using.
  6. Return shrimp and drained pasta to the skillet. Pour in about 1/4 cup reserved pasta water to loosen the sauce. Toss gently with tongs to coat pasta and shrimp evenly. Add more pasta water if needed.
  7. Remove skillet from heat. Stir in chopped parsley. Taste and adjust seasoning with salt and pepper. Serve immediately with grated Parmesan cheese.

Notes

Pat shrimp dry before cooking to ensure a good sear and avoid steaming. Do not overcook shrimp to keep them tender. Reserve pasta water to adjust sauce consistency. Use fresh lemon zest for best flavor. Butter can be swapped with extra olive oil for dairy-free version. Parmesan cheese is optional.
