Irresistible Healthy Blueberry Oat Bars

These healthy blueberry oat crumble bars are packed with juicy fruit, hearty oats, and natural sweetness, making them a wholesome yet indulgent treat.

  • 2 cups fresh or frozen blueberries
  • 1 1/2 cups rolled oats
  • 1 cup almond flour
  • 1/3 cup honey or maple syrup
  • 1/3 cup coconut oil or butter, melted
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 baking dish with parchment paper, leaving enough overhang to lift the bars out later.
  2. In a mixing bowl, combine rolled oats, almond flour, melted coconut oil or butter, honey or maple syrup, vanilla extract, and a pinch of salt. Mix until the mixture resembles coarse crumbs. Reserve about 1/3 of this mixture for the topping.
  3. In another bowl, toss blueberries with lemon juice, cornstarch, and honey or maple syrup. Mix until the blueberries are evenly coated.
  4. Press 2/3 of the oat crumble mixture firmly into the bottom of the prepared pan to form the crust. Spread the blueberry mixture evenly over the crust. Sprinkle the reserved crumble over the top.
  5. Bake for 35-40 minutes, or until the top is golden and the blueberry filling is bubbling.
  6. Allow the bars to cool in the pan for at least 20 minutes, then transfer them to a wire rack to cool fully.
  7. Slice the bars into squares or rectangles and serve as-is or with a dollop of yogurt or ice cream.

Notes

Let the bars cool completely before slicing to ensure they set properly. Add a pinch of cinnamon or nutmeg to the crumble for a warm, spiced twist.
