Irresistible Grilled Corn with Smoky Chipotle Lime Butter

A flavorful summer BBQ side dish featuring grilled corn slathered with a smoky, spicy, and tangy chipotle lime butter that is quick and easy to prepare.

  • 4 ears fresh corn on the cob, husked
  • 1/2 cup (1 stick) unsalted butter, softened
  • 12 chipotle peppers in adobo sauce, finely chopped
  • 2 tablespoons fresh lime juice (about 1 lime)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt, or to taste
  • Pinch of freshly ground black pepper
  • 2 tablespoons fresh cilantro, finely chopped (optional)

Instructions

  1. Husk the corn completely, removing all silk strands. Rinse under cold water and pat dry with a towel.
  2. In a medium mixing bowl, combine softened butter, chopped chipotle peppers, fresh lime juice, garlic powder, smoked paprika, salt, and black pepper. Mix thoroughly until evenly incorporated.
  3. Preheat grill to medium-high heat (375-450°F). Clean grill grates well.
  4. Place corn directly on grill grates. Cook for 10-12 minutes, turning every 2-3 minutes to get even char and grill marks. Brush with water or butter if kernels start to dry out.
  5. Remove corn from grill and immediately brush generously with chipotle lime butter. Add a second coat if desired.
  6. Sprinkle with chopped cilantro if using and serve warm.

Notes

Make chipotle lime butter up to 2 days ahead and store in fridge. Bring to room temperature before spreading. For dairy-free version, substitute butter with coconut oil or vegan margarine. If no grill available, roast corn in 425°F oven for 20-25 minutes or use a grill pan on stovetop.
