  • 1 large butternut squash, peeled, deseeded, and cubed
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, roasted
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • 3 cups vegetable stock, low-sodium
  • ½ cup heavy cream (optional)
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Spread the cubed butternut squash on a baking sheet. Drizzle with olive oil and season with salt and pepper. Roast for 25-30 minutes, or until tender and slightly caramelized.
  3. Wrap the garlic cloves in aluminum foil with a drizzle of olive oil and roast alongside the squash until soft and sweet.
  4. In a large pot, heat the remaining olive oil over medium heat. Add diced onion and cook until translucent, about 5 minutes.
  5. Stir in the cumin and smoked paprika, cooking for another minute to release their flavors.
  6. Add the roasted squash, garlic, and vegetable stock to the pot. Bring to a boil, then reduce heat and simmer for 10 minutes.
  7. Use an immersion blender or transfer the mixture to a countertop blender. Blend until smooth and creamy.
  8. Taste and add salt and pepper as needed. Stir in the heavy cream if using.
  9. Ladle the soup into bowls and garnish with fresh parsley.

Notes

Roasting the squash and garlic enhances the flavor. Adjust seasoning to taste and thin the soup with vegetable stock if needed.
