  • 2 tablespoons extra virgin olive oil
  • 1 small yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 1 can (28 ounces / 800 grams) crushed San Marzano tomatoes
  • 1/4 cup (60 ml) vodka
  • 1/2 cup (120 ml) heavy cream
  • 1/4 teaspoon red pepper flakes (optional)
  • A small handful fresh basil leaves, chopped
  • 1/2 cup (50 grams) grated Parmesan cheese, plus extra for serving
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add 12 ounces (340 g) of penne pasta and cook according to package instructions until al dente (usually about 10-12 minutes). Reserve 1/2 cup (120 ml) of pasta water before draining.
  2. While pasta cooks, heat 2 tablespoons of extra virgin olive oil in a large skillet over medium heat. Add the finely chopped small yellow onion and cook for 4-5 minutes until soft and translucent.
  3. Add 3 minced garlic cloves and cook for another minute, stirring constantly to avoid burning.
  4. Pour in the 28-ounce (800 g) can of crushed San Marzano tomatoes and stir to combine.
  5. Carefully add 1/4 cup (60 ml) vodka; it may flame briefly. Let the sauce simmer gently for 10 minutes to cook off the alcohol and meld flavors.
  6. Lower the heat and stir in 1/2 cup (120 ml) heavy cream, 1/4 teaspoon red pepper flakes (optional), and a pinch of salt and pepper. Simmer for another 3-4 minutes until creamy and slightly thickened. Add reserved pasta water if sauce is too thick.
  7. Add the drained penne pasta directly to the skillet with the sauce. Toss gently to coat evenly, adding more pasta water if needed for desired consistency.
  8. Stir in a handful of chopped fresh basil leaves and 1/2 cup (50 g) grated Parmesan cheese. Taste and adjust seasoning as needed.
  9. Serve immediately, plating the pasta and sprinkling extra Parmesan and basil leaves on top.

Notes

If sauce separates or looks oily, add a splash more cream or a teaspoon of butter and stir. Do not rush simmering steps to develop flavor. Reserve pasta water to adjust sauce consistency. Freshly grate Parmesan for best flavor. For dairy-free, use coconut or cashew cream and vegan cheese. For gluten-free, use gluten-free pasta.
