  • 1 pound (450g) fresh mushrooms (button, cremini, or baby bella)
  • 4 tablespoons unsalted butter
  • 4 garlic cloves, finely minced or grated
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley, chopped (for garnish)
  • Lemon juice (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small saucepan, melt 4 tablespoons of unsalted butter over low heat. Stir in 4 minced garlic cloves and cook for about 1 minute until fragrant.
  3. Place the mushrooms in a large mixing bowl. Add the garlic butter, olive oil, salt, and black pepper. Toss until the mushrooms are evenly coated.
  4. Spread the mushrooms in a single layer on a rimmed baking sheet.
  5. Roast the mushrooms for 20-25 minutes, stirring halfway through, until golden brown.
  6. Remove the mushrooms from the oven and sprinkle with freshly chopped parsley. Optionally, squeeze a little lemon juice over the top.
  7. Serve immediately while warm and fragrant.
