  • Lemon zest from 1 lemon (optional)

Instructions

  1. Wash and dry the berries thoroughly to remove all moisture.
  2. In a mixing bowl, whisk the egg white lightly until frothy but not stiff. Stir in vanilla extract and lemon zest if using.
  3. Gently add the dry berries to the egg white mixture and toss carefully to coat evenly without breaking the berries.
  4. Transfer the coated berries onto a lined baking sheet or tray in a single layer.
  5. Sprinkle granulated sugar evenly over the berries using a fine mesh sieve or spoon.
  6. Allow the sugar-coated berries to air dry at room temperature for about 15 minutes until the sugar sets and forms a crisp shell.
  7. Carefully transfer the frosted berries to a serving tray and garnish with fresh mint leaves. Serve immediately or refrigerate up to one hour before serving.

Notes

Ensure berries are completely dry before coating to prevent sugar from becoming sticky. Use a light touch when whisking egg whites to avoid stiff peaks. Serve berries soon after frosting to maintain crisp sugar coating. For egg-free version, brush berries with simple syrup before sugar coating.
