  • Day-old bread, cubed and slightly dried out (French bread, sourdough, or whole-grain bread)
  • Unsalted butter, melted
  • 1 onion, finely chopped
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 2 cups chicken or vegetable broth
  • 2 large eggs, beaten
  • 1 cup dried cranberries
  • 1 cup walnuts, chopped
  • Fresh herbs: parsley, sage, thyme, and rosemary, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish with butter or cooking spray.
  2. Cut day-old bread into 1-inch cubes and spread them on a baking sheet. Toast in the oven for 10 minutes to dry them out further.
  3. Heat butter in a skillet over medium heat. Add onions, celery, and garlic. Cook until softened and fragrant, about 5-7 minutes.
  4. In a large mixing bowl, combine the toasted bread cubes, sautéed vegetables, cranberries, walnuts, and fresh herbs.
  5. Whisk together chicken broth and eggs. Pour this mixture over the bread mixture and gently toss to combine, ensuring all bread is evenly coated.
  6. Season with salt and pepper to taste.
  7. Transfer the stuffing mixture to the greased baking dish, spreading it out evenly.
  8. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15-20 minutes, or until the top is golden brown and crispy.
  9. Let the stuffing cool for a few minutes before serving. Enjoy warm!
