Irresistible Club Sandwich Pasta Salad

A refreshing summer pasta salad that combines the flavors of a classic club sandwich with tender pasta, smoky bacon, juicy tomatoes, crisp lettuce, and creamy dressing.

  • 8 oz rotini or bowtie pasta, cooked al dente
  • 6 strips smoky bacon, cooked and crumbled
  • 1 cup cherry tomatoes, halved
  • 2 cups chopped romaine or iceberg lettuce
  • 1 cup cooked and diced chicken
  • 1 cup shredded cheddar cheese
  • 1/4 cup thinly sliced red onion (optional)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.
  2. While the pasta cools, cook the bacon in a skillet over medium heat until crispy. Transfer to a paper towel-lined plate to remove excess grease, then crumble into small pieces.
  3. Prepare the dressing by whisking together the mayonnaise, sour cream, Dijon mustard, salt, and pepper in a small mixing bowl. Adjust seasoning to taste.
  4. In a large mixing bowl, combine the cooled pasta, crumbled bacon, cherry tomatoes, lettuce, chicken, cheddar cheese, and red onion.
  5. Pour the dressing over the salad and toss gently until everything is evenly coated.
  6. Refrigerate for at least 15 minutes before serving to allow the flavors to meld together. Serve chilled and enjoy!

Notes

For best results, add lettuce just before serving to keep it crisp. If the salad feels dry after refrigeration, stir in extra dressing or a splash of olive oil.
