Irresistible Chocolate-Covered Strawberry Mug Brownies

A quick and easy microwave mug brownie recipe featuring fudgy chocolate brownie topped with fresh strawberries coated in melted chocolate. Perfect for a fast, homemade dessert with a fresh twist.

  • 4 tablespoons (30 g) all-purpose flour
  • 4 tablespoons (50 g) granulated sugar
  • 2 tablespoons (10 g) unsweetened cocoa powder
  • 1/8 teaspoon baking powder
  • Pinch of salt
  • 3 tablespoons (45 ml) milk (any kind)
  • 2 tablespoons (30 ml) vegetable oil
  • 1/4 teaspoon vanilla extract
  • 34 medium fresh strawberries, washed and hulled
  • 2 tablespoons (30 g) chocolate chips or chunks (semi-sweet or milk chocolate)

Instructions

  1. Lightly grease the inside of a microwave-safe mug with vegetable oil or non-stick spray.
  2. In the mug, combine flour, sugar, cocoa powder, baking powder, and salt. Stir well.
  3. Add milk, vegetable oil, and vanilla extract to the mug. Mix thoroughly until smooth and spreadable.
  4. Microwave on high for 60 to 70 seconds until the top is set but slightly moist.
  5. While the brownie cooks, hull and wash the strawberries and pat dry.
  6. Melt chocolate chips in a microwave-safe bowl in 20-second intervals, stirring until smooth.
  7. Dip each strawberry into the melted chocolate and place on parchment paper to set.
  8. After the brownie cools for about a minute, place the chocolate-covered strawberries on top.
  9. Enjoy immediately while warm.

Notes

Adjust microwave time to preference: reduce by 5 seconds for gooier center or add 5-10 seconds for more cake-like texture. Use a mug with at least 12 oz capacity to prevent overflow. Grease mug well to avoid sticking. Melt chocolate in short bursts to avoid burning. Serve immediately for best texture and flavor.
