  • 16 oz store-bought potato gnocchi
  • 2 cups fresh baby spinach
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1/4 teaspoon nutmeg
  • Salt and black pepper to taste

Instructions

  1. Season raw chicken with salt and pepper, then sauté in olive oil over medium heat until cooked through (about 6-8 minutes per side). Shred and set aside.
  2. Melt butter in a large pot over medium heat. Add diced onion, carrots, and celery. Cook for 5-7 minutes until softened. Stir in minced garlic and cook for 1 minute until fragrant.
  3. Sprinkle flour over the sautéed vegetables and stir well to coat. Cook for 2-3 minutes to remove the raw flour taste.
  4. Gradually pour in the chicken broth while stirring constantly to prevent lumps. Bring to a gentle simmer.
  5. Stir in the heavy cream and season with dried thyme, nutmeg, salt, and pepper. Let the mixture simmer for 5 minutes.
  6. Gently add the gnocchi to the pot and cook for 3-4 minutes until they float to the top.
  7. Stir in the fresh spinach and shredded chicken. Cook for an additional 2-3 minutes until the spinach is wilted and the chicken is heated through.
  8. Taste and adjust seasoning as needed. Serve hot with a sprinkle of Parmesan cheese on top, if desired.

Notes

For a dairy-free version, substitute heavy cream with coconut milk. Add spinach at the end to preserve its vibrant color and texture. Adjust the thickness of the soup by adding more broth or simmering uncovered.
