Irresistible Butternut Squash Soup Recipe with Sweet Potato

  • 1 medium butternut squash, peeled, seeded, and cubed
  • 1 large sweet potato, peeled and cubed
  • 1 medium carrot, peeled and chopped
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth (low-sodium preferred)
  • 1 cup full-fat coconut milk
  • 2 tablespoons olive oil
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon nutmeg
  • Salt and pepper to taste

Instructions

  1. Heat 2 tablespoons of olive oil in a large soup pot over medium heat.
  2. Add the diced onion and sauté for 5 minutes, until translucent. Stir in the minced garlic and cook for another minute.
  3. Add the cubed butternut squash, sweet potato, and carrot to the pot. Stir to coat the veggies in the oil.
  4. Pour in 4 cups of vegetable broth, ensuring the vegetables are fully submerged. Bring the mixture to a boil.
  5. Reduce the heat to a simmer, cover, and cook for 20-25 minutes, or until the vegetables are tender.
  6. Turn off the heat and use an immersion blender to puree the soup until smooth. If using a countertop blender, blend in batches and return the soup to the pot.
  7. Stir in 1 cup of coconut milk, a pinch of cinnamon, and a dash of nutmeg. Season with salt and pepper to taste.
  8. Return the pot to the stove and heat gently for 5 minutes, stirring occasionally.
  9. Serve warm with your favorite garnish, like chopped parsley, a drizzle of coconut milk, or pumpkin seeds.
