  • 4 cups vegetable broth (low-sodium preferred)
  • 1 cup coconut milk (or heavy cream)
  • 2 tablespoons olive oil

  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the butternut squash, slice the carrot, and chop the apple and onion. Place them all on a sheet pan.
