Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper or grease it thoroughly.
  2. In a bowl, mix the flour, softened butter, sugar, and a pinch of salt until crumbly. Press this mixture evenly into the bottom of your baking pan. Bake for 10 minutes, then let cool slightly.
  3. In a large bowl, beat the cream cheese until smooth. Add the sugar, eggs, and vanilla extract. Mix until well combined and creamy. Pour the filling over the cooled crust, spreading it out evenly.
  4. In another bowl, toss the blueberries with sugar, cornstarch, and lemon juice until coated. Spoon the blueberry mixture evenly over the cheesecake layer.
  5. In a small bowl, combine flour, sugar, melted butter, baking powder, and a pinch of salt. Stir until crumbly, then sprinkle it generously over the blueberries.
  6. Place the pan in the preheated oven and bake for 35-40 minutes, or until the topping is golden brown and the cheesecake layer is set.
  7. Let the bars cool completely at room temperature, then refrigerate for at least 2 hours to set before slicing into bars.
