  • 1/2 cup barbecue sauce
  • 8 slices thick-cut bacon
  • 1 cup shredded sharp cheddar cheese

  • Optional: Fresh parsley or green onions for garnish

Instructions

  1. Place the chicken breasts between two pieces of plastic wrap and use a meat mallet to pound them to an even thickness. Season both sides with salt and pepper.
  2. In a skillet over medium heat, cook the bacon until crispy. Drain on paper towels and set aside.
  3. Heat your grill or grill pan to medium-high. Brush the grates with olive oil to prevent sticking.
  4. Place the chicken on the grill and cook for about 4-5 minutes per side, or until the internal temperature reaches 165°F (74°C).
  5. Brush each chicken breast generously with barbecue sauce. Top with two slices of bacon and a handful of shredded cheddar cheese.
  6. Close the grill lid or cover the pan with a lid for 1-2 minutes, allowing the cheese to melt completely.
