Irresistible Baked Brie with Cranberry and Walnuts

A quick and easy holiday appetizer featuring warm, gooey baked brie topped with tart cranberries and crunchy toasted walnuts. Perfect for festive gatherings and cozy nights.

Ingredients

  • 1 (8-ounce) wheel of whole brie cheese (225g), rind on
  • 3/4 cup fresh cranberries (100g), rinsed and patted dry
  • 1/2 cup chopped walnuts (50g), toasted
  • 2 tablespoons packed brown sugar (25g)
  • 1 tablespoon honey (15ml)
  • 1 teaspoon finely chopped fresh rosemary (optional)
  • A pinch of ground cinnamon (optional)
  • Crackers or sliced baguette, for serving

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Toast the walnuts in a dry skillet over medium heat, stirring frequently for 3-5 minutes until fragrant and lightly browned. Remove from heat and let cool.
  3. In a small bowl, combine fresh cranberries, toasted walnuts, brown sugar, chopped rosemary (if using), and cinnamon. Toss gently to coat evenly.
  4. Place the brie wheel in the center of the prepared baking sheet or ovenproof dish. Optionally, slice off the top rind for easier melting.
  5. Spoon the cranberry and walnut mixture evenly over the top of the brie, pressing lightly to adhere.
  6. Bake for 15-20 minutes until the brie is soft and gooey but not runny; the center should jiggle slightly when shaken gently.
  7. Remove from oven and drizzle honey over the cranberry topping for a glossy finish.
  8. Serve immediately with crackers or toasted baguette slices.

Notes

If the brie isn’t soft enough after 20 minutes, bake for a few more minutes but watch carefully to avoid over-melting. Let baked brie rest 3-5 minutes before serving to set slightly. Toast bread or crackers just before serving for maximum crunch. For nut-free version, substitute walnuts with pumpkin seeds or omit nuts. Frozen cranberries can be used if thawed and drained well.
