  • 2 large eggs, room temperature
  • 1/2 cup (120ml) vegetable oil

  • 1/4 cup (60ml) milk
  • 2 cups (300g) apples, peeled and diced
  • 1 cup (120g) powdered sugar
  • 2 tbsp (30ml) milk
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your loaf pan with butter or nonstick spray. Line it with parchment paper if desired.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  3. In a medium bowl, whisk the eggs, granulated sugar, brown sugar, vegetable oil, vanilla extract, and milk until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, mixing gently until combined. Fold in the diced apples.
  5. Pour the batter into your prepared pan and smooth the top. Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean. Let it cool in the pan for 10 minutes, then transfer to a wire rack.
  6. In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth. Adjust the milk quantity for your desired consistency.
