  • 1/2 cup roasted red peppers, diced
  • 1/2 cup Kalamata olives, chopped
  • 1/4 cup sun-dried tomatoes, finely chopped
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon garlic powder
  • Crackers or bread for serving

Instructions

  1. In a mixing bowl, beat the softened cream cheese until smooth and creamy using a hand or stand mixer. Add the garlic powder and Italian seasoning, and mix until fully incorporated.
  2. Lay a sheet of plastic wrap on your counter. Scoop the cream cheese mixture onto the wrap and shape it into a log (about 8 inches long). Wrap the log tightly and refrigerate for at least 30 minutes to firm up.
  3. While the cream cheese is chilling, dice the roasted red peppers, chop the Kalamata olives, and finely chop the sun-dried tomatoes and parsley.
  4. Unwrap the chilled cream cheese log and place it on your serving platter. Gently press the chopped toppings onto the surface of the cream cheese log, covering it completely.
  5. Arrange crackers or bread slices around the log and serve immediately. If not serving right away, refrigerate until needed.
