Irish Soda Bread Recipe Easy Cozy Loaf with Honey Butter Glaze

A quick and easy Irish soda bread with a crusty exterior and tender, slightly sweet interior, finished with a cozy honey butter glaze for a melt-in-your-mouth experience.

  • 3 cups (375 g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 ¾ cups (420 ml) buttermilk (or 1 ¾ cups milk mixed with 1 tablespoon lemon juice or white vinegar, let sit 5 minutes)
  • 3 tablespoons (45 g) unsalted butter, softened (some for dough, some for glaze)
  • 3 tablespoons (60 ml) honey (for honey butter glaze)
  • Optional: 1 tablespoon caraway seeds
  • Optional: ½ cup (75 g) raisins or currants

Instructions

  1. Preheat your oven to 425°F (220°C). Place your cast-iron skillet or baking sheet inside to heat up while you prepare the dough.
  2. In a large bowl, whisk together 3 cups (375 g) all-purpose flour, 1 teaspoon baking soda, and 1 teaspoon salt. Stir in caraway seeds or dried fruit if using.
  3. Add 3 tablespoons (45 g) softened unsalted butter. Rub the butter into the flour mixture until it resembles coarse crumbs.
  4. Gradually pour in 1 ¾ cups (420 ml) buttermilk. Stir gently with a wooden spoon until the dough just comes together. Add more buttermilk by tablespoon if dough feels dry.
  5. Turn dough onto a lightly floured surface. Gently shape into a round loaf about 7 inches (18 cm) in diameter without kneading.
  6. Transfer dough to parchment paper. Score a deep cross about ½ inch (1 cm) deep on top with a sharp knife.
  7. Slide parchment with dough onto the preheated skillet or baking sheet. Bake for 30-35 minutes until golden brown and hollow sounding when tapped.
  8. While baking, prepare honey butter glaze by mixing 3 tablespoons (45 g) melted unsalted butter with 3 tablespoons (60 ml) honey.
  9. Remove bread from oven and immediately brush honey butter glaze over the top.
  10. Let bread cool on a wire rack for at least 20 minutes before slicing.

Notes

Do not overwork the dough to keep the crumb tender. Use fresh baking soda for best rise. Preheat baking surface for a crisp crust. Score the dough deeply for even baking. Tent with foil if browning too quickly. Parchment paper helps with transfer and cleanup.
