  • 1 lb boneless chicken breasts, cut into bite-sized pieces
  • 2 tbsp honey
  • 1 tsp black pepper, freshly ground
  • 1/2 tsp chili flakes (optional)
  • 1 tbsp soy sauce
  • 1 tbsp olive oil
  • 2 cups elbow macaroni or your favorite pasta shape
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups milk, warm
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • Salt and pepper, to taste
  • Optional garnish: chopped parsley or green onions

Instructions

  1. Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add the chicken pieces and cook for 5-6 minutes until browned and cooked through.
  3. In a small bowl, mix honey, black pepper, chili flakes, and soy sauce. Pour this mixture over the chicken in the skillet and toss to coat. Cook for an additional 2-3 minutes until the glaze thickens slightly. Remove from heat.
  4. In a medium saucepan, melt the butter over low heat. Whisk in the flour and cook for 1 minute, stirring constantly. Gradually add the warm milk, whisking to avoid lumps. Cook for 3-4 minutes until the sauce thickens.
  5. Lower the heat and stir in the shredded cheddar and mozzarella. Continue stirring until the cheese is fully melted and the sauce is smooth. Season with salt and pepper to taste.
  6. Toss the cooked pasta in the cheese sauce until fully coated.
  7. Divide the mac and cheese into serving bowls and top each with the honey pepper chicken. Garnish with parsley or green onions if desired. Serve warm and enjoy!
