  • 2 to 3 pounds boneless pork loin (900g to 1.4kg)
  • ½ cup honey (120ml)
  • 6 cloves garlic, minced (about 2 tablespoons)
  • ⅓ cup low-sodium soy sauce (80ml)
  • 2 tablespoons apple cider vinegar (30ml)
  • 2 tablespoons tomato paste (30g)
  • ¼ cup water (60ml)
  • 1 tablespoon cornstarch (8g) – optional for thickening

Instructions

  1. Pat your pork loin dry with paper towels and place it in your slow cooker or Instant Pot using tongs.
  2. In a small bowl, whisk together honey, soy sauce, minced garlic, apple cider vinegar, tomato paste, and water until smooth.
  3. Pour the glaze evenly over the pork loin.
  4. For slow cooker: cover and cook on high for 4 hours or low for 6–7 hours. For Instant Pot: cook on high pressure for 35 minutes, then natural release for 10 minutes.
  5. Optional: Remove pork and cover loosely with foil to rest. Pour cooking liquid into a small saucepan. Mix cornstarch with cold water and whisk into sauce. Heat on medium, stirring until thick and glossy (about 3 minutes). Pour over pork or serve on the side.
  6. Slice pork loin against the grain into thick medallions and spoon extra glaze over the top before serving.
