  • 1/2 cup breadcrumbs
  • 1 large egg
  • 2 tablespoons milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt

  • 1/4 cup soy sauce
  • 1/3 cup honey
  • 2 tablespoons ketchup
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 1/2 cups uncooked white or jasmine rice
  • 3 cups chicken broth
  • 1 cup frozen peas
  • 1/2 cup shredded carrots
  • Optional: chopped green onions and sesame seeds for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Grease your baking dish lightly with cooking spray or a bit of oil.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, egg, milk, garlic powder, onion powder, salt, and pepper. Mix until just combined—don’t overwork the meat. Roll into 1-inch balls and set aside.
  3. In a medium saucepan, whisk together soy sauce, honey, ketchup, rice vinegar, minced garlic, and grated ginger. Heat over medium heat until the sauce starts to bubble slightly. Remove from heat and let it cool for a few minutes.
  4. Rinse the rice under cold water until the water runs clear to remove excess starch. Add the rice and chicken broth to your baking dish, stirring gently to combine.
  5. Stir in the frozen peas and shredded carrots, spreading everything evenly across the bottom of the dish.
  6. Place the meatballs directly on top of the rice mixture, evenly spaced.
  7. Drizzle the honey garlic sauce over the meatballs and rice. Shake the pan lightly to distribute the sauce evenly.
  8. Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for another 10-15 minutes, or until the meatballs are cooked through (internal temperature should reach 160°F/71°C) and the rice is tender.
  9. Sprinkle chopped green onions and sesame seeds on top before serving for a pop of color and added flavor.
